Cake Decorating Course 1 Part 1

posted in Food & Recipe, Myself |

Today is my second class at Joann from 6:30-8:30pm.  During the first class, we basically talked about the different tools and what we need for this class.  We then have a week to prepare what to bring to today’s class.  Every student has to bring a novelty cake (with shape) or a round cake but need to design your own.

I didn’t have any novelty cake pan so I brought a round cake to the class. Beside the round cake, I also brought along my other Wilton Cake Decorating Tools. I have a tote on my shoulder, one hand with the cake caddy and another hand with the tool caddy.

Here is the start of the lesson, our tutor Julie was giving us some instruction about our class today. We were supposed to practice mixing color on to the icing (by folding not stirring) and piping using star tips (16, 21) on our cake.

Class tutor - Julie

My plain round cake with no design. I have to come up with what I want to draw quick. I got the idea from Julie’s cake. Then I drew an outline on to the cake - freehand!

Before, plain cake with white icing

My buttercream, which I used Crisco Shortening w/ Butter Flavor instead of the regular, turned out to be light yellow and not white white. So my icing color didn’t turn out what I wanted them to be. I just used whatever color I have made. The first color was a slight pink/red I actually added Christmas Red. I piped out the stars onto the cake, and it wasn’t that difficult. When I was practicing at home it was hard because (now I found out) of the height of the table I was working at. At home, I used the kitchen counter which is too high for my height. Here, we used regular writing table and with me standing up, it was easy to pipe the icing out.

The second color was a mix of the leftover pink icing plus some blue to make a light lavender. Here is my half way through project.

Here is a close up on the stars icing.

It took longer to mix the right color than to pipe out the design. I used a green color icing to pipe in the blanks. Final look at my cake … a butterfly!!!!

This is the cake Julie brought to class. She showed us 3 different type of star tips on this cake and also using the different consistency icing. The dark color icing was a mix from the regular store bought icing, which is good for icing the cake but not cake decorating as it is too thin. She also told us not to have peaks on our star design like hers. We should release the pressure before lifting up the pipe from the design.

Most of the other students used the bigger tip #21 instead of 16. I used the tip #16 all over my butterfly.

I came home later in the evening, took several more pictures of the cake and then scraped the buttercream away into the trash. I am going to eat the cake but not the icing. Don’t want to deposit more useless fat/calories on my already fatty fatty thighs. No doubt, I am going to gain a lot of weight by eating the whole cake myself, one cake each week. tsk tsk tsk … no one else here fancy cake except me. *sigh* Anyone want me to email a piece to them?

Perfect! Very nice! Didn’t even know you joined a cake-decorating class. I was just going through the short courses they offer here and came upon the same class but it was too expensive and the campus offering it was too far.

Ya, surprise you mar. This class only $15, regular price $30 but got promotion this term. Anyway, they should offer it for free bcos we ended up buying so many tools from the store you know.

Not bad for a beginner… I think you will do great when you approach the final course. Keep it up!!!

    p/s: fun hor?

It is fun! I wish there are more time to practise at home. But no one eats my cake. I have to throw it away after a few days.

VERY NICE! You’re really good in it!
Is it a baking class (as in teach how to bake cake) or just how to decorate the cake?

Hehehe, me also like baking now =D! It makes my mood much better, but i just buy premixes, mix bake and done, thats all, no decos etc! Maybe i should go attend classes too, it seems interesting!!

Thanks. Not a baking class, just cake decorating. We bring a cake from home, doesn’t matter if is premix or your own recipe from scratch. I heard cake decorating classes there are expensive.
