Not so good picture

We were at Disney California Adventure yesterday evening and took a picture with the ‘Californian Style‘ Santa Claus (sunglasses & Hawaiian shirt). I think this might be the 7th time we’ve visited Disneyland and CA Adventure Theme Park since we bought the annual passes in October, two months ago.

Anyway, the picture didn’t turn out good. It was blur, the person holding the camera, a Disney employee who was standing there to help visitors take pictures with Santa, must had shakey hands. We were so wanted to have a family picture for our holiday greeting cards but this would not be the one. On top of that, Brandon wasn’t looking at the camera, and just look at the way he was sitting on his Daddy’s lap. *slap head* … ‘kang-kang‘, his legs were wide opened … so impolite, ‘cho-loh‘ in Hokkien.

A note to Daddy: Remember to sit him correctly the next time he is on your lap for a family picture.

Interest rates increase

As many of you living in USA may have noticed that our home loans interest rates are no longer the lowest.  For the past two years, the interest rates have increased a little by little.  Many homeowners were affected by the increment of the interest rates and had caused them to foreclose on their homes.

Read the news yesterday that the subprime lending industry is going down due to the increase in foreclosures.  Subprime lenders were very in demand during the booming years in the real estate market.  Many buyers with no so good credit history were able to get themselves a place to call home by paying a higher interest rates provided by these subprime lenders. 

Lucky for us, we weren’t affected by the increase of the interest rates.  Seven years ago, when we were shopping for mortgages, we only looked for conservative loans and found a great 30 years fixed program that fit our budget.  We feel so lucky to be able to own a home in this city without needing to worry much about all the upheaval in the lending industry.

Fish Porridge for Brandon

I love to make fish porridge for Brandon’s meal. It is easy to make. Usually I would get the frozen tilapia fillet from Sam’s Club in bulk. They are individually wrapped so I only take out 1 piece each time.

You will need: Fish (preferably fillet), diced celery, sliced carrot, chopped onion and garlic, a few slices of ginger, rice

Steps:

  1. Boil a pot of water.  Prepare your ingredients.
  2. Rinse the rice.
  3. When water boiling, drop in all the vegetables.
  4. Then drop in the fish fillet.
  5. When it reboils, put in the rice.
  6. Since I usually cook it on the stove, I have to stir it to prevent burnt in bottom of the pot. At the same time to break apart the cooked fish fillet.
  7. When the rice is cooked, I turn the heat to low to let it simmer.

  8. Add salt as needed.

Usually a pot of these (1 1/4 cup of rice) can last Brandon for 4 meals. I make usually make the porridge thicker like the picture below to ensure is filling.

Traveling Abroad

As you may have read that I may be away from my home sweet home for a month or two, traveling to another side of the world. It is hard to be able to bring all the files I need with me, especially if I need to show pictures files to my family and relatives while I am there. I figure a way to do this would to get remote access from RemotePC. My dad in Brisbane actually is using it.  One time he had me signed in using his username plus password from Los Angeles to access to his desktop. This is just an amazing technology.

He is a user of RemotePC and he highly recommend it if I would be traveling. There’s a 30 days free trial to use their service and for only $4.95/month I would be able to access my home PC from anywhere in the world with an internet connection. Their latest enhancement is Vista compatibility. I may be signing up for a free trial; do you want to join me?
